Mushroom kebabs

Here’s a flavorful recipe for mushroom kebabs that are perfect for grilling or roasting:

Ingredients:

  • 400g mushrooms (button or portobello), cleaned and whole or halved
  • 1 bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, sliced into rounds
  • For the marinade:
    • 3 tablespoons olive oil
    • 2 tablespoons soy sauce
    • 2 tablespoons balsamic vinegar or lemon juice
    • 2 garlic cloves, minced
    • 1 teaspoon dried oregano or Italian seasoning
    • Salt and pepper to taste

Instructions:

  1. Prepare the Marinade:

    • In a bowl, whisk together olive oil, soy sauce, balsamic vinegar (or lemon juice), minced garlic, oregano, salt, and pepper.
  2. Marinate the Vegetables:

    • Place the mushrooms, bell pepper, onion, and zucchini in a large bowl or a zip-top bag. Pour the marinade over the vegetables and toss to coat. Let them marinate for at least 30 minutes, or up to a few hours in the fridge for more flavor.
